Recipe: Creamy Lemon Herb Quinoa

Ingredients:

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 lemon (zested and juiced)
  • 1 tbsp olive oil
  • 2 cloves garlic (minced)
  • Fresh herbs (such as parsley or dill)
  • Salt and pepper to taste

Instructions:

  2. Add the quinoa to the boiling broth, reduce heat, and cover. Let it simmer for about 15 minutes or until the quinoa is tender and liquid is absorbed.
