4-6 lamb chops

1 tbsp butter

Directions

  1. Pat lamb chops dry and season with salt, pepper, garlic, rosemary, and thyme.
  2. Heat olive oil in your Hell's Kitchen 11" Fry Pan over medium-high heat.
  3. Sear lamb chops for 3-4 minutes on each side, or until a meat thermometer shows 135F for medium-rare, or 140-145F for medium.  Remove and tent with foil.
  4. Lower heat and deglaze the pan with red wine or beef broth, scraping up the brown bits.
  5. Stir in butter to create a glossy pan jus.
  6. Spoon the pan jus over the lamb chops and serve with roasted potatoes or asparagus.

Honey-Glazed Carrots with Thyme

1 lb baby carrots, peeled

2 tbsp butter

Spring Vegetable Frittata with Herbed Goat Cheese

Ingredients

8 large eggs

1/4 cup whole milk or heavy cream

1 tbsp olive oil

1 tbsp unsalted butter

1/2 cup sliced leeks (white/light green parts only)

1 cup asparagus, cut into 1-inch pieces

1/2 cup cherry tomatoes, halved

1/2 cup baby spinach

1/4 cup fresh parsley, chopped

2 oz herb goat cheese, crumbled

Optional: 1/4 cup grated parmesan for extra richness

Directions

  1. Preheat oven to 375°F.
  2. In a large bowl, whisk together eggs, milk, salt, and pepper. Set aside.
  3. In your Hell's Kitchen 4 QT Sauté Pan, heat olive oil and butter over medium heat. Sauté leeks for 2-3 minutes until soft. Add asparagus and cook for another 3-4 minutes. Stir in cherry tomatoes and spinach, cooking just until spinach wilts.

1 1/2 cups heavy cream

1/2 cup whole milk

1/4 cup sugar

2 tbsp cold water

For the Berry Compote:

1 cup mixed berries (strawberries, blueberries, raspberries)

2 tbsp sugar

1 tbsp lemon juice

Directions

  1. Prepare the Panna Cotta: In your Hell's Kitchen 2.5 QT Saucepan, combine the heavy cream, milk, and sugar. Heat over medium heat until it's warm and the sugar has dissolved - do not let it boil.
  2. In a small bowl, sprinkle the gelatin over the cold water and let it bloom for 5 minutes. Once the cream mixture is warm, stir in the bloomed gelatin and vanilla extract until fully dissolved.
  3. Pour the mixture into individual ramekins or glasses and let it cool to room temperature. Then, cover and refrigerate for at least 4 hours, or until set.
  4. Make the berry compote: In the same saucepan, add the mixed berries, sugar, and lemon juice. Heat over medium heat, stirring occasionally, until the berries release their juices and the mixture thickens slightly, about 8-10 minutes. Remove from heat and let cool.
  5. Serve: Once the panna cotta is set, spoon the berry compote over the top just before serving. Garnish with extra fresh berries or a mint sprig for an added touch.
