That's the double-layer enamel, bonded to the steel under high heat, coating the pan top and bottom.

It's what makes cleanup almost automatic.

Under the cooking surface, the enamel does something most ceramic pans skip: it creates a smooth, stable foundation that the ceramic coating can bond to.

Cheap ceramic pans bond directly to aluminum, which is why their non-stick fails so quickly. Ours doesn't.
